Where can I get a sheathed maximum thermometer at a sensible price? The price seems to up at about 10% a year.

Would always recommend Russell, but I think that you will find 'sensible' is £100 with vat and p+p.

could always wait for one on ebay - I have just picked up a minimum thermom' for £30 with the p+p
